I love rice pudding. Since I was a kid, my family knew that if they wanted to get me to eat something even remotely nutritious, go with rice pudding. This is my version and it’s truly yummy.

Ingredients

  • ½ cup Carnaroli or Arborio rice, do not rinse
  • 3 cups unsweetened oat milk

Method

Combine all ingredients except orange juice and almonds in a saucepan and bring to a boil over medium heat. Reduce heat to low and cover. Cook, stirring frequently, until the rice is creamy and the milk is absorbed, about 25–30 minutes.

Remove from heat and stir in orange juice. Spoon into individual cups and garnish with almonds right before serving. Serve warm.
