This was one of the first dishes I ever made as a vegetarian, and I remember being so impressed that something so delicious could come out of mixing together a few vegetables. Although this recipe has evolved tremendously since that first version, the basics remain the same: fresh vegetables roasted under a savory crumble. You can, of course, swap in whatever vegetables you have on hand (just try to chop them all the same size for even baking). The same goes for the topping, as any fresh he
