This recipe is the German in me coming out. I’ve loved spaetzle since before I can remember, and it’s not just because it’s one of the only traditional German foods a vegetarian can eat. Spaetzle is just as delicious as its Italian counterpart, gnocchi, but even quicker and simpler to whip up. There is no shaping of the dough involved so you can just mix the dough and plop it into the boiling water. Since spaetzle can be pretty hearty, I love how the light pesto helps even out the dish.
