I love whipping up this vegan cheese when I’m going to be traveling because I don’t have to worry about keeping it as chilled as dairy cheese. You should still keep this refrigerated as much as possible, but it’s okay if it sits out while you drive to your favorite picnic area. If possible, look for macadamia pieces instead of whole nuts, as they tend to be cheaper and need less soaking time.
