Being a vegetarian doesn’t mean you should miss out on flavor. These lentils are spiced with the same ingredients as greasy chorizo for an intense and spicy side dish. Whip up a big batch to serve as a side for friends or halve the recipe and top with a fried egg for a complete meal for two.
In a large saucepan over medium heat, warm the olive oil. Add the onion and sauté until softened, 3 to 5 minutes. Add the garlic and lentils and sauté for 30 seconds. Add the chipotle peppers, cumin, paprika, and cinnamon and sauté for 30 seconds more. Pour in the water, turn the heat to medium-high, and simmer until the lentils are soft, about 30 minutes.
