Both deviled eggs and pimiento dip are staples at community events around the heartland, so I invented this potato hybrid. If I am bringing these potato skins to an outdoor event, I will make a vegan version using vegan sour cream, vegan mayonnaise (I recommend Just Mayo), and nutritional yeast so I don’t have to worry if they sit out in the sun for a while.
