I love risotto but am not always in the mood to stand over the stove and stir it for more than an hour. This hands-off recipe lets you throw everything into the oven and bake the liquid away. The creamy pumpkin gives this dish an almost cheesy flavor, similar to baked macaroni and cheese. The toasted bread crumb topping gives the final dish an extra crunch. I love serving this dish when having people over for a casual dinner, as the end results feel fancy but I don’t have to fuss in the kit
