This is the only recipe in this book for which I will encourage you to use dried herbs instead of fresh. Dried sage will result in a silky smooth gravy, perfect for biscuits or serving alongside Thanksgiving dishes. This recipe can easily be made vegan by substituting nondairy butter and unsweetened plain nondairy milk, but watch the gravy closely, as it may thicken sooner or take a bit longer since nondairy milk brands have different consistencies.
