This casserole relies on quinoa to create a slightly dense, protein-packed filling. Lean on canned tomatoes in this recipe if fresh ones are terribly out of season (look for a canned variety for which the tomatoes have been packed within hours of picking since they will be the freshest). I love making this dish for dinner on Sunday nights and then reheating the leftovers for the next few days for healthful and quick lunches.
