The key to this creamy vegan chowder is the silky cashew cream that gets stirred in toward the end. Since there aren’t any herbs in this chowder, season generously with salt and pepper to bring out the flavors of the wild rice and vegetables.

Make sure to check the wild rice often during cooking as the kernels are all different sizes and finish at different times. Also, look for wild rice in the bulk section of your grocery store, where it is usually much cheaper. Serve this chowder
