Enjoy this applesauce on warm German Fennel & Sweet Potato Pancakes, swirled in your morning porridge, or by itself for a quick and nutritious snack. I like leaving the apples in little chunks, but you are welcome to purée the apples with a hand blender for a more traditional applesauce.

  • 1 lb [455 g] apples, cored, peeled, and chopped into 1-in [2.5-cm] pieces

Method

In a medium saucepan over medium heat, combine the apples, brown sugar, butter, cinnamon, nutmeg, and water. Cook, stirring, until the butter melts and the apples are coated with the spices, 3 to 5 minutes. Turn the heat to low, cover, and simmer until the apples are easily pierced with a fork, about 20 minutes. Remove from the heat and let cool to room temperature. Store in an airtight contain
