Cauliflower has such a delicate flavour. I think it gets lost when it’s cooked with lots of other vegetables, such as for a robustly flavoured minestrone. Here, the cauliflower really stands out as the hero of the dish, becoming luscious and creamy when you blend it, without the need for additional cream.
