This is a classic, inexpensive green soup that tastes good chilled or hot. The addition of the goat’s cheese toasts, served on the side, turns the dish into a one-course lunch or supper dish. I’ve also served it on smarter occasions, taking the trouble to blend the soup to a velvety smoothness, and make mini goat’s cheese toasts which I place on the top of each serving of soup.
