In our family, Sunday night means eggs on toast. It’s the perfect light meal, when you’re likely to have had a large lunch, plus it’s comforting when you’re in the grip of the Sunday blues. This is just a way of dressing up those eggs, and using up some leftover vegetables from lunch at the same time. Any cooked vegetable will work well, but my preference would be potatoes, carrots, parsnips, chard or spinach, beetroot, beans, broccoli, peas, courgette and cauliflower.
