A Turkish chef I once worked with used to bring these in for us whenever he had his mother visiting, as she used to make them. They make perfect picnic food, or would be a great vegan addition to a salad table at a barbecue. You can shape them as large or small as you like, but I think they’re delicious eaten with crunchy baby gem lettuce, so I make mine to fit inside a baby gem leaf.
