This is such a satisfactory loaf to make. It’s healthy, delicious and makes the best cheese sandwiches! As with most breads, kneading should be vigorous. Don’t ‘play’ with the dough: give it a good bashing, repeatedly pushing it against the work surface with the heel of your hand to stretch and then fold it.
