Freshly made, brioche is one of the best breads in the world. I defy you not to eat the majority of it as soon as it’s cool. Traditionally a breakfast bread, it also makes excellent burger buns, though you may want to reduce the sugar if you’re using them for a savoury purpose.

Ingredients

  • 250 g strong white flour plus extra for dusting

Method

  1. Combine the flour, 60ml tepid water, milk, salt, sugar and egg with the yeast in a large mixing bowl, or the bowl of a stand mixer fitted with a dough hook. Mix it to form a dough, then knead it vigorously for a few minutes until the dough is nice and elastic.
