This is a far cry from the bread and butter pudding you remember from school. Absurdly indulgent though it sounds, this really is best served with a generous glug of Jersey cream on the side. It’s a wonderful second life for stale pain au chocolat. And if it’s stale plain croissants you are trying to use up, add a sprinkling of chopped chocolate before pouring on the custard.
