A good Madeira cake is such a useful thing to have in your baking repertoire. It’s plain, but not boring – the lemon and orange zest gives it a lovely, subtle flavour which allows it to pair well with any kind of icing, or fruit. You can eat it plain with a cup of tea, serve it as a dessert with a fruit compote and whipped cream, use it in a trifle, or decorate it for a celebration. It’s firm enough that it can withstand stacking, or carving into novelty shapes too.
