I love brownies, but I don’t like that the nuts inside tend to go soft and waxy. In this version, I caramelize the nuts before adding them to the batter, which gives them a crunchy shell and prevents them from going waxy. I also like to sprinkle cocoa nibs on top, for added crunch and cocoa flavour, but they could easily be omitted if you prefer.
