Red lentils have a subtler, slightly sweeter flavor and much less structure when cooked than their brown and green cousins. In fact, they mostly turn to mush, are primarily common in soup-like treatments and dals, and don’t really work in salads at all. But for a veggie burger, the mush can be useful.
