This burger is inspired by the indulgent, unique veggie burger at Alias, a now-closed restaurant that was on Manhattan’s Lower East Side. It’s formed by two portobello mushrooms that sandwich a thick slice of queso blanco and a layer of puréed black beans, then crusted with panko and deep-fried.
