While this salad is all about the dressing, to me, it also illustrates what a versatile, not-boring ingredient lettuce can be. Briefly grilling it allows new flavors to appear, slightly softening the vegetable and creating an altogether new salad experience. But back to the dressing: It does require a high-speed blender to achieve the creaminess that makes it so delicious and exciting. Sunflower seeds lend a nutty depth, and charred zucchini provides body and a mild, charred-tasting neutral
