I wasn’t a fan of baked french fries until I figured out this way to make them. It always seemed that the texture was wrong—overcooked on the outside, and dry and starchy like cotton on the inside. In this simple recipe, the combination of soaking the potatoes (which helps rid them of some excess starch), and then baking under a high heat solves the problem of texture, while keeping the salty, crispy, potato flavor going strong.
