These crispy, savory fried shallots are an unexpected but welcome addition to veggie burgers. I especially like them on Curried Eggplant and Tomato Burgers. In the absence of shallots, use a small white or red onion, sliced as thinly as possible. The method here is one I came to learn later in my career: you’ll begin with cold oil, which cooks the shallots gradually, and results in more even brownness.
