Pickled onions are a great addition to almost any burger, sandwich, or salad, adding a bracing contrast to rich foods and strong flavors. Use any light-colored vinegar you prefer: red or white wine vinegar, plain white vinegar, rice vinegar, and cider vinegar all work very well.
In a small saucepan, combine the cold water, vinegar, salt, and sugar. Place over medium heat and bring to a simmer. Add the onions. As the mixture comes back to heat, the onions will collapse and become submerged in the liquid, which will only take a few minutes. Remove from the heat and allow to cool, then transfer to a sterilized lidded container and store in the refrigerator for up to 2 wee
