Luisa says at Christmas they eat Mostarda, mascarpone, & Baicoli. The beauty here is the few drops of mustard essence stirred into the cooled jam. Hopefully, you will manage to get some essence (which is not the same as oil & is difficult to get). If you do use essence, take great care as it is very potent – stand back & wear a mask if necessary to protect your eyes. Keep the essence in a hidden place in a cupboard far out of reach. We have given mustard powder as an alternative
