This is a much appreciated aperitivo in Venice. To make a Spritz, take a large wine glass & add a good splash of an aperitif, such as campari or its lower-alcohol version, aperol. Next comes a good splash of white wine or prosecco & a few ice cubes. A splash of soda water (club soda, or ‘seltz’ in the bars) is next because it revs everything up from bottom to top, & last, a piece of orange & a green olive on a cocktail stick.
