Scampi in Saor

My friend, Sergia, once made me a whole wonderful batch of these to carry home with me on the train & they were delicious. You could add 2 tablespoons of pine nuts & raisins to the onion, or even use leek instead of onion. The scampi must be lovely & fresh.
