This is nice as part of a cicchetti plate or just as an antipasto. It’s very easy to double the quantity to serve more people, & you can also completely cook the potatoes separately & then turn them through the cooked octopus.
____To clean the octopus, cut between the head & tentacles, just below the eyes. Grasp the body & push the beak up & out through the centre of the tentacles with your finger. Cut the eyes from the head. To clean the head, carefully slit through one side, avoiding the ink sac, & scrape out any gut. Rinse under running water to remove any grit, then drain.
