This is delicious as an appetiser but is also fantastic in summer with tuna, or served over pasta. Intruglio is actually a Tuscan word that means ‘brew’ or ‘concoction’. Although this is not a Venetian recipe, I feel that it belongs in the book because Sergia, who is the heart & soul of Venice as far as I am concerned, makes it & sells it in her alimentari in the Calle dei Do Mori.
