This is everywhere & no wonder, since it is made from such simple but beautiful ingredients – the typical lovely thick wholewheat spaghetti, plump anchovies in salt, onions & freshly cracked black pepper. Traditionally this dish was served at room temperature. Ceramic dishes of this would be laid out on the tables of osterie ready for the customers.

You could try this using red onion, or adding a sprig or two of fresh thyme to the onions while they cook. Or throw in a few sm
