Castraure are small artichokes – the tiny bitter beauties that come from the Venetian vegetable garden island of Sant’ Erasmus. If you can’t find castraure use a couple of ordinary, larger artichokes instead. This is my kind of primo & definitely what I would order if I saw it on a restaurant menu.
