Castraure are small artichokes – the tiny bitter beauties that come from the Venetian vegetable garden island of Sant’ Erasmus. If you can’t find castraure use a couple of ordinary, larger artichokes instead. This is my kind of primo & definitely what I would order if I saw it on a restaurant menu. I adore artichokes cooked in all possible ways. Use large, fresh, sweet, succulent prawns: I used three per serving as they were large, but you might decide to add more. You can leave them un
