The Venetians have a wonderful selection of wines to drink & splash into their cooking. The sparkling white, prosecco, is much of a habit & will be often ordered throughout the meal.
I ate a fantastic version of this at the Trattoria alla Madonna, which is something of an institution – a huge space with 40 men in soft white jackets serving. Licio strode up to me like papa bear & made wise suggestions of what I should order (he should know: he’s been there for more years
