I was surprised at how much I liked this. It is a wonderfully masculine dish. It’s especially wonderful with the broth from Bollito di carne, but you can make it with a lighter meat or chicken broth or even vegetable broth. Traditionally, this was probably a very simple dish; by using good-quality red wine & broth from the bollito, this version becomes something quite noble.
