Squid stewed with ink is often made without the tomato; if you decide you’d like to make it that way, you may need to add an extra ½ cupful of wine & water so the sauce doesn’t dry out. It can also be made as a primo, turned through spaghetti. The deep jet black colour of this dish is very dramatic & can deter timid diners, but the taste is wonderful. When I was cooking I couldn’t see anything but black – I kept hoping that none of my rings would fall into the pot.
