San pietro (john dory) is a very delicate fish & cooking for too long will cause it to break up. If you buy it whole & fillet it yourself, then use the head & trimmings to make a fish broth for risotto. Of course, you could use other firm white fish fillets here. If it’s helpful to prepare the artichokes in advance, keep them in a bowl of cold water with a little lemon juice to prevent them discolouring.
