This recipe is a variation of Italy’s famous Vitello tonnato. Someone told me about it on the island of Lido but using boiled squid or calamari, & I couldn’t wait to try it. Here I’ve grilled the calamari, but you might like to try it boiled some time.
This is great. I’ve made it as a main, but it also works well for more people as an antipasto. You don’t have to make your own mayonnaise – use a top-quality bought one. A lightly dressed salad is good with this.
