This is a primo, but fits here because it is lovely made with the complex meat broth from the bollito misto (opposite). Serve it before the bollito.

Method

____If you are making pasta in brodo for 4 people, put about 1.5 litres (6 cups) of broth into a saucepan & bring to the boil. Check that your broth is well seasoned. Snap up
