Nice. Bitter. Easy. This is great when radicchio is in season & is a lovely side dish with the liver & onions or any secondo you think would go well. Apart from being such a gorgeous colour, radicchio is also very good for us. You need the longer Treviso radicchio for this – the round puffy ones are from nearby bustling Chioggia. With any luck all your radicchio will be similar inside – but the ones with a lot of ‘anima’ (the white stem) will need
