Lidia used to collect the long thin wild asparagus on an island of the lagoon called Caroman. She would pick it by hand at the edge of the small wood, where it grew in the sand – long, long & thin, thin.

We cooked the asparagus in 2 batches in a frying pan large enough to fit them lying flat. But if you don’t have a large (or very tall) pan, you can do it in a smaller pan & in several batches as long as they are all cooked in the vinegar equally. If your asparagus is of norm
