  • zest of 1 lemon, cut into big strips
  • 225 g (8 oz/1 cup) <

Method

____Put the lemon zest & sugar in a small saucepan with 125 ml (4 fl oz/ ½ cup) water. Bring to the boil, stirring to dissolve the sugar. Lower the heat & simmer gently, without stirring, for 5-10 minutes until the mixture becomes syrupy & tastes lemon zesty. Fish out the pieces of zest
