Here zabaione is served the classic way, sweet & warm. But you may like to add some whipped cream to make it a softer pudding… If so, whip 185 ml (6 fl oz/ ¾ cup) cream until lovely & billowy, then fold it gently but thoroughly into the zabaione. You could also add a pinch of ground cinnamon or grated lemon zest or a dash of vanilla extract although I love the simplicity of marsala here
