These dumplings get their name from the translucent wrapper that encompasses a visible filling, making them look like gems. The chewy wrappers are the same ones used in restaurants for ha gao 蝦餃 (shrimp dumplings), though my filling isn’t replicating shrimp. Once the dough is prepared, the dumplings should be assembled right away. When they’re all wrapped, you can freeze these to enjoy at a later date. Please note that in restaurants, crystal skin wrappers are sometimes made with lard.
