I love taro so much; this earthy tuber is incredibly fragrant with a delicately unique sweetness. When fried, taro puffs have a signature wisp or flaking of the crust. The temperature of the oil must be just right to achieve the texture, though—if it is too hot, the wisps won’t form (instead, it will be a hard shell), and if it’s too cool, the puffs will fall apart.
