Even softer and silkier than silken tofu, dau fu fa 豆腐花 is often prepared in a large container, where the tofu is left to set undisturbed once the coagulant is added to the soy milk. It is a delicate, melt-in-your-mouth treat, especially when served warm with ginger syrup. This was one of the most anticipated dim sum trolley dishes of my youth, and it is my daughter’s favorite too!
