  • 1 cup [180 g] dried adzuki beans
  • 2 Tbsp dried lily bulbs (optional)

Method

Rinse and soak the beans in plenty of water overnight.

Drain the beans and add them to a large pot with 6 cups [1.4 L] of water. Add the lily bulbs, if using, and dried orange peel. Bring to a boil, skimming off any froth that initially rises to the surface. Cover and simmer over low heat for 1 hour until the beans are soft and start to break down.
