Bitter melon was my go-to lunchbox item when I was working in Hong Kong. It has medicinal properties and is perfect for combatting the heat in the summertime. It is also good for regulating blood sugar levels. Bitter melons should be firm without any blemishes or soft spots. The darker the melon, the more bitter it is. The pillowy-soft and crispy tofu that Mama Wong taught me how to make is an amazing complement to the bitter fruit.
