Wonton literally means “swallowing clouds,” and these delicate dumplings floating in soup are very reminiscent of this image. Noodle shops pride themselves on their “bouncy” (爽口彈牙) noodles, which are paired with the wontons. I use Lotus Foods rice ramen as a comparable substitute.
